Sous chef / Junior Sous chef
1. The candidate needs to have a minimum of 4-6 years experience as a cdp. and around 2 years experience as a sous chef. I would prefer to get the chef from a 5 star hotel back ground.
They will need to have a very good knowledge of Indian Cuisine----- They should have a good experience in Curry and Tandoori section.
2. the candidate will be able to run the restaurant in independently in the absence of the Manager ---of course he will get enough training before he is allowed to run the restaurant independently.
3. The most important aspect is the individual is fiery and hungry to come to our client, not for the money but for an opportunity to be successful. The candidate can move this Indian Restaurant forward by bringing his knowledge and experience from India to London .
4. The candidate must be intelligent and can make decisions. Can motivate staff and get the best from them.
5. The package will be around £250.00-£400 net per week depending on experience, plus accommodation and flight ticket to India.
Here are some of the duties required for a Sous chef to perform.... they are just basics duties, obviously they will be trained for at-least 2 months
1. To ensure that the consistency of the food is always constant especially when they are on the pass.
2. In the Manager’s absence they are fully responsible for the kitchen and every single dish that leaves the kitchen. They must manage and organise the pass and ensure that they have personally checked each dish that leaves. The Superior must be informed immediately on his return of any problems or issues regarding your service in a hand over
3. They must be fully conversant with each section of the kitchen and have complete knowledge of the duties involved.
4. The kitchen team reporting to you must be managed and support given to those under pressure or on weaker sections.
5. The general cleanliness of the kitchen
6. Stock rotation needs to ensured
7. Ensuring every stored food item has been correctly labelled, dated and cling filmed.
8. General filling of invoices, credit notes etc to be maintained, informing me of any appropriate price changes etc. and using this exercise to improve your understanding of food costs.
